Top Five Convenience Foods

Gregory's peanut butter and jelly post in The Rocktucky Chef got me thinking about Beta Mom kitchen survival tips. Here are my top five convenience foods, which owe a lot to the wonders of Food Technology.

5. Peanut butter and jelly sandwiches. Staple of school lunches and quick fix for any meal at home.

4. Pasta and pasta sauce from a jar. My Italian grandmother and mother, who both simmered homemade sauce from home-canned tomatoes for hours,would not approve. But it works for us.

3. Bagged vegetables. Be it salad, baby-cut carrots, or steam-in-the-microwave frozen vegetables, these are essentials. I must confess I throw away almost as many salad bags as we eat, but at least I was able to get rid of my salad spinner.  
 
2. Frozen soy "meatless" products. Soy hamburger, soy & vegetable burgers, soy sausage patties and soy "chicken" nuggets. These come in extremely handy for quick tacos, chili, and other various and sundry meals.
 
1. And my all time top favorite is .....eggs. I'm talking Eggbeaters, those liquid nonfat eggs that are perfect for omeletes and baking, and the peeled, hard-boiled eggs that I found at my grocers last year. Now, if I every really want to make deviled eggs for a party, I can. No more excuses.

I like frozen smoked sausage. Very versatile when it comes to fast meals: chop it and put it in chili or soup, dice it and fry with peppers, slice it and serve alongside scrambled eggs or on a sandwich.

Chili! Make it ahead of time, and freeze in ziploc bags. (Make it without beans if you're going to freeze it.) Great for eating by itself, or putting on hotdogs, or dribbling on tortilla chips with lots of cheddar cheese. (Off to raid the freezer.)

Comments from my Aunt: Of course, doctored pasta and sauce are at the top of the list.

Bagged vegies are carrots and celery hearts, but I do eat lots of the other

vegetables and fruit.

Frozen dinners have a lot of sodium in them, but I do love my stuffed pepper,  

Chicken Kiev, Voila and Bertolli products.

I buy cooked meats in the cooler when they are on sale.

I must try your soy products cause I guess they must be healthy, and you sure

surprised me with the boiled eggs.

Oatmeal

Progresso Lentil soup

Tuna fish

Order a ham and mushroom pizza and a couple bottles of beer

Ruthie's response:

eggs---frozen chicken tenders--Lipton Noodle Soup---Macaroni of all

kinds -with or without sauce and frozen french fried potatoes, the thin sliced

that I put into my toaster oven, they are great and low fat.  

Yesterday I made one of my famous soups.........

Manischewitz Minestroni Soup and I also use Split Pea, but always put in a half

of a little can of tomato sauce.  Sometimes I start with chicken broth.  

Sometimes I mince onions and saute in oil.  Takes one hour to simmer.  Yummy!
